Ingredients – makes 2 large servings
- 2 tbsp extra virgin olive oil
- 1 block firm tofu – drained and crumbled/mashed
- 2 tsp smoked paprika
- 1 finely chopped red onion
- 2 garlic cloves finely chopped
- 1 tsp ground coriander
- 1 tsp ground cumin
- 2 tsp smoked paprika
- 1 large tomato diced
- 2 tbsp chopped fresh coriander
- 4 mushrooms (sliced) – optional
- chilli flames (optional)
- salt and pepper to taste
To serve – ½ sliced avocado, toasted sourdough
Method
- Heat the olive oil in a pan
- Add the onion to the pan and cook on a medium heat until it starts to soften
- Add the garlic and cook for a minute or 2 taking care not to burn
- Add the tomato, mushrooms (if using) smoked paprika, coriander and cumin to the pan and cook until the vegetables start to soften a little
- Add the tofu to the pan and stir to mix – cook on a medium heat stirring every so often until it is heated through.
- Mix in the coriander and a little olive oil if it seems too dry
- Add salt and peeper to taste, more paprika if needed and sprinkle with chilli flakes if you like more heat.
- Serve with some toasted sourdough and sliced avocado
